Mr. Cai, the owner of Mi's Family, explains that a good pot of congee should contain lots of texture; the soup should be rich and the ingredients fresh. Cai fits the bill at this Chaozhou-style eatery that sells different congee selections and rice dishes, as he tries to break the stereotype that congee is only a side dish or a late-night snack. The well-trained chefs here cook seafood dishes right in front of you, so you can see the freshness of the fish and the quality of the other ingredients. --By Joan Chang, translated by Ann Lee
A. To get the flavor just right in the Mushroom & Chicken Congee (NT$500/lg, NT$300/sm), chefs marinate the chicken with saucy mushrooms. The Crispy Gluten Rice Wings (NT$138) are marinated in an exclusive sauce, and then stuffed with rice; although the wings are fried, they are not too greasy. The Banana & Salad Shrimp (NT$200) is made with bananas, fresh shrimp, and basil, and has a slightly sweet taste and crispy texture.
B. To make the Mixed Barbecued Meat Congee (NT$500/lg, NT$300/sm), chefs use dried sausage, barbecued sausage, and other barbecued goods. The juicy meat adds a nice flavor to the soup.
